Ageing the wood
Our first tasting takes place while the stave wood is being seasoned, after 15 months, in order to follow the ageing process and to define the taste profile for each pallet of stave wood according to the wood's tannic structure.
Lots that we feel too young are left to age further, and tasted once a month until they reach the desired aromatic maturity.
The importance of Terroir
The taste of oak and its tactile sensations can vary from one forest to another.
We select trees from selected plots in the most famous forests in order to control the quality and the taste of our wood, from the forest to the barrel.
