An original philosophy : the importance of tasting oak

Tasting oak has much in common with tasting wine.

Oak expresses such subtle taste characteristics as balance, roundness, tautness, power, bitterness, and astringency, with fruity or herbaceous overtones.
Its texture can be silky or angular, and oak can be full-bodied or tightly-wound on the palate.

From each pallet we remove shavings from 3 different staves in order to have a representative sample from each pallet. these shavings are then ground into a powder.

We macerate this powder in an aqueous solution according to a strict procedure.
Tasting notes are taken for each pallet.




Two levels of tasting

  • Determining the seasoning time :
    by tasting during the seasoning process, we can keep track of changes in the quality of the tannin.
  • Defining three basic taste profiles :

    Light structure : selection white wine
    Bel Air Elégance

    Medium structure – High structure : Selection red wine
    Bel Air Révélation & Bel Air Volupté
